Phenolic variability in fruit from the ‘Arbequina’ olive cultivar under Mediterranean and Subtropical climatic conditions

نویسندگان

چکیده

In the present work, we compared phenol content and composition of fruit from ‘Arbequina’ cultivar in four Mediterranean (in Andalucía, Southern Iberian Peninsula) two Sub-Tropical (Canary Islands) locations throughout harvest period. Two were maintained with drip irrigation, while remaining dry farming. Water availability date seemed to play more important roles than air temperature on phenolic most studied components. The variability associated location was a result high values observed farming, respect other irrigation. Few differences found among drip-irrigated locations, despite fact that Sub-Tropical. addition, sharp decrease during period for compounds.

From Olive Fruits to Olive Oil: Phenolic Compound Transfer in Six Different Olive Cultivars Grown under the Same Agronomical Conditions

Phenolic compounds are responsible of the nutritional and sensory quality of extra-virgin olive oil (EVOO). The composition of phenolic compounds in EVOO is related to the initial content of phenolic compounds in the olive-fruit tissues and the activity of enzymes acting on these compounds during the industrial process to produce the oil. In this work, the phenolic composition was studied in si...

An Oleuropein β-Glucosidase from Olive Fruit Is Involved in Determining the Phenolic Composition of Virgin Olive Oil

Phenolic composition of virgin olive oil is determined by the enzymatic and/or chemical reactions that take place during olive fruit processing. Of these enzymes, β-glucosidase activity plays a relevant role in the transformation of the phenolic glycosides present in the olive fruit, generating different secoiridoid derivatives. The main goal of the present study was to characterize olive fruit...
